The main piece of legislation is the Aged Care Act 1997.

The Food safety legislation is vital in aged care.  The laws on this are different for each state.  Here is information about the legislation in New South Wales (NSW).  In NSW all homes are required to be audited every year by the NSW Food Authority or a third party auditor.
